Many hoteliers are now aligning themselves with objectives set forth by the United Nations by developing more environmentally friendly solutions to reduce their impact on the environment or by combating food waste. Others design products to improve the luxury experience, whether through well-being or lifestyle.

Verdant luxury at the Four Seasons Hotel in Singapore

The 255 room property recently completed a full transformation of its interior design. Inspired by the surrounding lush vegetation, the color green has literally invaded the building on every floor, in every possible shade of green on different decorative supports. The lobby is thus the setting for a multitude of plant essences, arranged by Nicolai Bergmann, director of floral art since April 2019. The swimming pool on the roof terrace is no exception and has a green band encircling the space.

Singapore is renowned for its efforts in terms of green spaces, notably with the 100-hectare Gardens by the Bay park located in the heart of the city, some of which was opened in 2010 and 2012. The rest is still under construction. The city also has a natural and cultural UNESCO World Heritage Site - Singapore's colonial botanical gardens - which are planted in an English garden style.

IHG finds a solution to reduce food waste

InterContinental Hotels Group® (IHG®) has partnered with Winnow, a company specializing in technological innovation, to address the problem. According to the hotelier, it would be possible to reduce food waste by no less than 30% thanks to artificial intelligence. The principle is simple: a Winnow Vision machine reviews all food prepared using several sensors (camera, smart scales and AI-based smart meters).

The goal is to know which ones are the most wasted and to what extent, and then understand how to optimize the menus to reduce the loss of ingredients. This advanced technology is already in place at seven sites in the EMEA region (Europe, Middle East, Asia and Africa), and is expected to integrate thirty more in the near future. It is also expected to expand to the Americas and mainland China in the future.

Kenneth Macpherson, CEO, EMEAA, IHG, comments on this advancement ée en faveur de la gastronomie durable :

With more than 5,600 hotels right across the world, a commitment to operating responsibly is at the heart of all we do. We know there’s always more that can be done to make a greater difference – whether that’s minimising waste through the removal of plastic straws or introducing innovative technology to reduce our environmental impact. Our partnership with Winnow will help our hotels be smarter and savvier in their approach to creating compelling menus that result in less waste whether it’s a grab-and-go breakfast, a family restaurant or a Michelin dining experience. I’m delighted that this is being led by some of our hotels in the Middle East, who are already seeing significant food waste reductions, and I’m looking forward to seeing this technology take off in more and more of our hotels around the world.

A culinary cruise on the Nile by Four Seasons

Four Seasons has inaugurated a new cruise concept on the legendary Egyptian river. The First Nile Boat has has docked on the west bank of the Nile opposite Four Seasons Hotel Cairo at the First Residence. Far from being a simple means of transportation, this embarcation invites its guests to a palette of sensory pleasures - both culinary and visual.

The boat has two restaurants with very different menues. The first, Xodó, offers meat-based Brazilian cuisine direct from South America. The second, Nairu, takes its inspiration from Japanese culinary and artistic traditions, with dishes that are one more exotic than the next, such as bao buns and lemongrass beef short ribs. The address aspires to becoming one of the high places for culinary discovery in Cairo.
