Henrique Sá Pessoa and José Avillez will cook together in the Secret Room at Four Seasons Hotel Ritz Lisbon

The air of mystery grows thick throughout the corridors of the city’s most iconic hotel. The lights dim and a secret is whispered from one room to another. Towards the end of the long, wide hallway, a wooden door hides the restlessness of a night that will go down in history. Inside, two strangely familiar figures make a deal: what happens at the Ritz Secret Room stays forever within its walls.

The third chapter of Lisbon’s most confidential dinners is set for October 3, 2019, and brings together two grand ambassadors of Portuguese contemporary cuisine. Henrique Sá Pessoa (chef at the two Michelin starred restaurant, Alma) and José Avillez (from Belcanto, also a two Michelin starred restaurant) will do at Four Seasons Hotel Ritz Lisbon what no one ever dared to imagine before: to cook together for the first time in a collaborative dinner, and for a table of 20 people only.

No detail is left to chance. The Hotel's resident team, led by Executive Chef Pascal Meynard, masterfully improvises an assembly line that can take place in the most unusual corners of the Hotel, while Pastry Sous-Chef Diogo Lopes is responsible for the final shot of the meal.

On the 10th floor, the details are finalised to host the night of all nights, yet it is in the basement, where the luxurious history of the Hotel is kept intact, that the real inspiration comes from. Grand gold plated candlesticks, tableware from banquets crystalised in time, unique pieces from other eras serve as an epigraph to a dinner that is at the same time, a tribute to Hotel Ritz Lisbon’s 60-year legacy.

On a night where the luxury goes hand in hand mystery, white period uniforms come out of the vault and into the Presidential Suite, the plates are exclusively designed by ceramicists Studio Neves, and the artistic component is brought to life by performer Alice Joana Gonçalves. At the table, José Avillez and Henrique Sá Pessoa present their best creations in a unique and unrepeatable night.

Ritz’s Secret Room by Sangue na Guelra began in 2018 with dinners headed by Chef Eneko Atxa (Azurmendi, 3* Michelin, Spain) and by Chef Alex Atala (D.O.M, 2* Michelin, Brazil), and are a co-production between Four Seasons Hotel Ritz Lisbon and Sangue na Guelra.

About the Guest Chefs

Henrique Sá Pessoa

He’s one of the most successful chefs in the national food scene and also one of the most cherished by the general public. At the end of 2015 he reopened Alma in Lisbon's Chiado neighbourhood, a restaurant where he can freely express all his creativity and which, in fewer than three years, already has the distinction of two Michelin stars. He is also at the helm of Tapisco, a tapas and snack restaurant, and Atelier, a multifunctional space for creation and experimentation.

José Avillez

Considered one of the great references of gastronomy in Portugal, he has continuously stood out for his entrepreneurial spirit, already having several projects to his name. However, it is at Belcanto, considered one of the 50 best restaurants in the world by The World’s 50 Best Restaurants and distinguished with two Michelin stars, where he best expresses his creative evolution, always with the mission of promoting Portuguese cuisine all over the world.
